Banana and walnut ice cream

So this recipe will change your life. Okay, maybe that’s a slight exaggeration, but this banana and walnut ice cream recipe is certainly pretty magic! My sister-in-law told me about the base recipe for one ingredient banana ice cream (hint: the ingredient is in the title), and then I saw it last week on a Cup of Jo, so thought I’d give it a go. And it’s amazing. And there are probably limitless variations you can make!

All you need are:

  • 2 bananas, chopped up into rounds
  • 1 tsp honey
  • 1 tbsp walnuts

Step one of the base recipe is to freeze the banana round overnight, and then blend in a food processor (or fancy hand blender. I use this one with the small blender attachment, and it works a treat. I’ve had it since university!!). At first you’ll get bits that look like crumbs, but with a bit more whizzing about, gradually it forms a smooth, creamy consistency. That’s it, if all you want is banana ice cream!

Step two: But if you want the delicious ice cream I made, add your honey and walnuts and then pulse for around 30 seconds, so that the walnuts get chopped up and both ingredients get mixed in well to the ice cream.

Step three: Serve and eat and be thrilled that your dessert is actually just made of fruit, honey and nuts, and you can therefore eat a huge double portion!
